A car ride, italian strawberry liqueur and stop on a dirt road inspired this long term vision of sustainability, community and legacy. Elkstone farm is located in Steamboat Springs, Colorado, and is just a small part of a large ranch we have been involved with over the last seven years. We intentionally created this area to be a small scale, highly productive "farm" producing fruit, berries, vegetables and value- added products such as teas and jams. A 4000 square foot green house, designed and built in collaboration with Eco-Systems Design, is planted with a variety of annuals, perennials, Mediterranean and tropical fruits. Based on a forest system in line with ecological principals, it is challenging how we typically think of food production. The surrounding 3 acres houses a lovely new caretaker cottage and has been transformed into a cut-flower field, berry vineyard, and forest gardens filled with fruit trees, vegetable and perennial herb guilds, and medicinal plants for teas.
A farm stand, CSA and educational seminars are also in the works. Community and health are happening!
